Sous Vide Caramelized Onions Recipe

This recipe gives you sweet, rich, and deeply flavorful caramelized onions with almost no hands-on work. While not actually "caramelized" (it's a low temperature Maillard reaction), these onions have a silky smooth texture, and cooking them sous vide removes not only the long time standing over the stove stirring, but also any risk of burning. These are a perfect addition for burgers, steaks, sandwiches, soups, pizzas, pasta, dips, and countless other dishes.

Sous Vide Caramelized Onions Recipe

Ingredients for Sous Vide Caramelized Onions

  • For the Onions

  • 4 onions (red or white)
  • 2 tablespoons Canola oil for sweating

Cooking Instructions for Sous Vide Caramelized Onions

For the Onions

Slice onions into uniform thin slices on a mandolin or with a knife.

In a pan over medium-low heat, sweat the onions until translucent but not browned. This step is important to remove the gasses from the onions before vacuum sealing. Fully chill sweated onions before moving onto next step.

Bag the onions and vacuum seal at max pressure, or use the water displacement method.

Place the bag in the water bath and cook 20 - 24 hours until desired level of browning is attained.

Chill and reserve for any uses from soup to sandwiches, pizza, eggs and more.
