Sous Vide and Smoked Umami Olive Oil Recipe

First the olive oil is infused using sous vide with black garlic, herbs and mushrooms, then it's finished off with a hot charcoal briquette for smoke flavors.

This recipe has two unique components to it, first the olive oil is infused in the sous vide machine with black garlic, herbs and mushrooms.

Finally, it's finished off with a hot charcoal bricket that adds tons of smokey flavor to it. It also makes for an amazing presentation if you have friends over!

Sous Vide and Smoked Umami Olive Oil Recipe

Ingredients for Sous Vide and Smoked Umami Olive Oil

  • For the Umami Olive Oil Infusion

  • 22g dry mushrooms
  • 7g black garlic
  • Fresh rosemary and sage
  • 16 oz olive oil

Cooking Instructions for Sous Vide and Smoked Umami Olive Oil

For the Umami Olive Oil Infusion

Combine all ingredients in a Mason jar. Cook at 145°F (62.8°C) for 3 hours plus 24 hours (or overnight) on your countertop for a more pronounced infusion.

For the Charcoal Smoked Infusion

Drop a live (gray) charcoal inside your strained olive oil infusion for 30 seconds and double strain it with cheese cloth to remove any small particles.

Bottle and enjoy it for about 1 month on your countertop or refrigerator.
