Although any variety of cucumber can be pickled in a brine solution of sugar, vinegar and spices, actual pickling cucumbers are specifically grown to be uniform in their husky width and shorter length. They are normally 1½" to 4" long when sold. They have a light green, spiny or spotted unwaxed skin that does not taste as bitter as regular cucumbers. In addition, their drier flesh allows them to better absorb the picking brine. Pickling cucumbers are graded by their diameter to length ratio, good color, firmness, and straightness.
For the highest quality pickle, plan to pickle the cucumbers as soon as possible after they are picked. Also as a rule of thumb, pickling cucumbers that are about 1½ inches long are best for making gherkins and those that are about 3 to 4 inches long for dills. Use odd-shaped and more mature cucumbers for relishes or bread-and-butter style pickles.
To answer How many pickling cucumbers are in a pound we went to the grocery store to check out the produce section. After surveying the selection, we discovered that 1 pound is equal to 6 to 7 pickling cucumbers that are 3 to 4 inches in length. We decided to use 1 pound of pickling cucumbers for our calculation sample.
From our 1 pound sample of fresh pickling cucumbers that measured about 1 ½ inches in length, we made about 1 pint of canned sweet gherkins. Whereas about 1 ½ to 2 pounds of fresh 3 to 4 inch long cucumbers yielded 1 quart of canned dill pickles.
From our sample pound of cucumbers, we averaged 70 dill pickle slices which measured about 3 cups. Or 1 cup of sliced dill pickles equals about 23 slices and weighs about ⅓ pound. It also takes about 22 to 25 gherkin sized pickling cucumbers to fill a pint jar.
