Green onions, or scallions, are onions that are harvested when immature. They are long, finger-thin with firm white bottoms and crisp green tops, both of which are edible.
Scallions and green onions can be stored in a plastic bag in the refrigerator; they will hold for 5 days without becoming limp.
Freezing onions make them limp, however, they still have flavor to contribute to a dish. You can freeze whole or chopped scallions and green onions to use in cooked dishes.
