Rockey's White BBQ Sauce Recipe

Rockey's White BBQ Sauce Recipe

  • Cooks: 203°F (95°C) for 1 hour
  • 1 Gallon

Ingredients for Rockey's White BBQ Sauce

  • For the Infusion

  • 1 Large Ginger, sliced
  • 1 Serrano Chili, Sliced
  • 1 Lemon, Skin
  • 250g Rice Vinegar
  • 100g Apple Cider Vinegar
  • 250g Rockey's Liqueur
  • For the Sauce Body

  • 10 Granny Smith Apples, cored
  • 850g Fresh Diced Pineapple
  • 500g White onion
  • 500ml Pilsner Beer
  • 200g Hot Green Tea
  • 1L Coconut Water
  • 3 Cloves Garlic
  • For the Seasoning Paste:

  • 15g Dry Mustard
  • 4g White Pepper
  • 100g Honey
  • 5g Toasted Sesame Oil
  • 8g MSG
  • 30g Salt

Cooking Instructions for Rockey's White BBQ Sauce

For the Infusion

Put all the infusion ingredients in a zip lock bag.

Place the bag into a water bath at 95°C for 1 hour.

For the Sauce Body

Combine all the ingredients for the body of the sauce in a large pot.

Cover and bring to a boil. The goal is not necessarily to cook all the fruit

thoroughly but rather to get all the ingredients to a consistency tender enough to puree.

Using an immersion blender, puree the sauce. Be careful when pureeing as the mixture is HOT!

For the Seasoning Paste

Combine all the seasoning ingredients and stir to form a paste.

To Finish

After an hour is up, take the zip lock bag out of the immersion circulator and strain the infusion.

Add the strained infusion liquid and seasoning paste to the large pot of pureed sauce. Mix and strain.

Adjust salt to taste and enjoy at your barbecue. Tag @rockeysliqueur to share your creations!
