Sous Vide Adult Gummies Recipe

I first got this recipe from ChefSteps, they have a lot of great recipes that inspire my cooking, and I took it and applied it to making fun snacks for parties. You can put together with some flavored gummies, set them out so people can enjoy them as they're talking and mingling at the start of gatherings, but they also work great for any kind of desserts, if you want to just have them out for people to snack on afterwards. You can use any sort of liquid in these. I've done some with different amaro, port, cocktails, sangria, and wine. You can also make them non-alcoholic with coffee, tea, essential oils or extracts. Anything that's pretty strongly flavored because you're going to be diluting it with a lot of gelatin and sugar.

Ingredients for Sous Vide Adult Gummies Recipe

  • For the Gummies 

  • 1/2 cup strongly flavored liquid 
  • 4 packets Knox gelatin (4 tablespoons or 12 sheets) 
  • 2/3 cup fructose 
  • 1/3 cup corn syrup 
  • To Assemble 

  • 1/3 cup corn starch (optional)
  •  1/3 cup powdered sugar (optional)

Cooking Instructions for Sous Vide Adult Gummies Recipe

For the Gummies 

Preheat your sous vide machine to 167°F (75°C). 

Place the liquid in a bowl then sprinkle the gelatin over the top to let bloom. If using sheets, place them in the liquid, covering them as much as possible. Let bloom, stirring occasionally. 

In a separate bowl, add the fructose and corn syrup and stir well to combine. 

Once the gelatin has bloomed, add the fructose and corn syrup to a pint Mason jar then top with the gelatin and any remaining liquid.

Finger tighten the lids and then place into the water bath and let cook for around an hour. 

To Set the Gummies 

Once cooked, carefully remove from the water bath and let cool for a few minutes. Stir the contents together until well mixed. 

If using a squirt bottle, transfer the liquid to the bottle then fill silicon molds with it. Let cool for a few minutes then wrap in plastic wrap and refrigerate for at least 4 to 6 hours, preferably overnight. 

To Assemble 

When ready to eat, remove the gummies from the refrigerator. 

If desired, combine the corn starch and powdered sugar in a bowl. Unmold the gummies into the mixture, toss to coat, and then brush off the excess powder using a pastry brush or your hands. 

They are now ready to eat and enjoy!
